Our Story
A Yonkers Firehouse, 1991.
Long before it was a product, it was a recipe. It started in 1991, in the kitchen of a Yonkers, NY firehouse — a place where good food and good company always went hand in hand. From its very first batch, it earned its place at every Costabile gathering. My grandfather would claim his usual barstool in the kitchen, waiting on a fresh loaf of bread to tear into and dip straight into the rich, spicy pepper salsa.
Word Got Around.
What started as a family recipe didn't stay one for long. One taste was all it took — and soon, no get-together felt complete without it.
Then People Got Creative.
Friends found uses we never imagined — spooned over pizza, spread on sandwiches, stirred into weeknight dinners. Our family salsa had a life far beyond the bread basket.

The Costabile family came from Calabria — the rugged southern tip of Italy where cherry peppers grow wild, the food is bold, and nothing on the table is ever bland. When the family recipe left that firehouse kitchen and became a product, there was only one place it could be made.

Don Primo's is produced in the Savuto Valley of Calabria by Azienda Scalzo — a family-run conserve maker working there since 1973. The Scalzos still run the operation themselves, using traditional methods, extra virgin olive oil, and no chemical preservatives. Our recipe couldn't be in better hands.
The Long Way Home.
What started in a Yonkers firehouse is now made in the same region the Costabiles came from — by another Italian family that's been doing it the right way for over fifty years. Calabria isn't a marketing line for us. It's where the recipe goes home to be made.
